Cooked or reheated BBQ food should be consumed as soon as possible.
SFA food-safety guidance:
- The Singapore Food Agency advises consuming cooked food as soon as possible. If cooked food is kept at room temperature, it should be consumed within 4 hours of cooking.
- Any cooked food left out for more than 4 hours should be discarded.
For outdoor BBQs:
- Grill and serve food in smaller batches so it can be eaten soon after cooking or reheating.
- Avoid cooking large quantities too early and leaving them on the table for a long period.
- Keep cooked food covered whenever it is not being served.
- Uncover only the portion you are ready to serve or eat.
- If part of the BBQ pit is used as a warming area, keep cooked food on a clean tray or upper warming rack physically separated from the raw-food cooking area and away from raw drips. Use separate utensils for cooked food. This is for short-term holding only and does not extend the 4-hour limit.
- Always keep raw and cooked food, plates and utensils separate to minimise cross-contamination.
